Pig trotter in Vinegar with ginger
The Chinese believe that vinegar purifies the blood, improves blood circulation & cleanse the arteries while the old ginger drives out the wind. As a precaution against the vinegar being too acidic & therefore weakening the stomach, the glutinous ligaments and collagen of the pig’s trotters in the dish balances out the vinegar's acidity and acts as a protection layer for the stomach.
Sesame oil is used here to promote blood circulation since it has heaty properties and eggs are good source of nourishment for the new mother’s body propelling her to speedy recovery after delivery.
