Home Made Lemon Rinds Snack

My confinement nanny is so clever! She has made some lemon rinds for us to snack on during the long hot hours. The lemons were used to make lemon water while the skin was scrubbed clean, and the white inner portions were all scrapped away with a knife. Next she sliced them thinly, added coarse sugar and let it out to dry for the past few days because the sun was so scorching hot. (singapore is currently experiencing a really dry weather spell)

in no time (or rather days) we have lemon rinds to eat!
